This handmade Scottish condiment gets its inspiration from India. The Indians usually have more than one of these relishes accompanying each meal. The Brits adopted chutney when Great Britain absorbed India and maintained it as part of its Empire from 1858-1947. It is now a British staple that is prominently featured in such menu items as the pub favorite, the “Ploughman’s Lunch,” which includes crusty bread, pork pie or cold cuts, a regional cheese, watercress, at least two pickles (one of which is chutney), and a bag of crisps (potato chips). This chutney is made with prunes, apricots, dates and mixed spices stewed with onions and sugar. It is a delicious condiment served with meat.
