Clotted Cream is uniquely British and made from the cream from high-fat breed cows in the West Country to produce a consistency similiar to soft ice-cream. Clotted cream is thicker and is normally used on scones or waffles with jam or jelly (if you have ever flown with British Airways you have enjoyed their afternoon tea with scones, clotted cream and jam) They can be stored in a cool place without refrigeration unopened and they keep for many months. Once opened they should be refrigerated and consumed within 3 days.
